Down and Dirty Roasted Baby Potatoes
Ingredients
- 1 bag baby potatoes or fingerlings
- 5 cloves garlic smashed
- 1 tbsp olive oil extra virgin
- 1 tbsp unsalted butter or ghee
- 1 tsp thyme dried
- 1 tsp parsley dried
- Kosher salt to taste
- black pepper to taste
Instructions
- Preheat oven to 350º F/180º C.
- Slice the baby potatoes in half and place in the baking dish. Smash and peel the garlic and place in the baking dish. Pour over the olive oil, salt the potatoes and add the seasonings.
- Place the lid on and give a good shake to help coat all of the potatoes and garlic with the olive oil and seasoning.
- Place in the oven for 25 minutes but set the timer for 15 minutes. Once 15 minutes have expired, grab both sides of the baking dish (thumbs over the lid to keep it in place) with oven mitts and shake to toss again. Then set back in the oven for an additional 5 minutes with the lid on.
- Remove from the oven and add in the butter or ghee. Then place the lid back on, and shake to toss again. Place back in the oven, lid on, for an additional 5 minutes, then remove.
- Salt and pepper to taste and serve as a side to your main course.
