I’ve got a fantastic recipe that’s not only delicious but also a hit with the kids – Bacon and Egg Fried Rice. I know, right? Imagine a dish where the delightful crunch of bacon meets the velvety goodness of eggs, all mixed in with the fragrant Asian flavors of garlic, ginger, and scallions. Now that I have your mouth watering, let’s discuss the ins and outs of this recipe.

The best part is that this recipe is super easy to make. You’ll start by cooking up some rice or using some left-over rice that’s been in the refrigerator overnight. Cold rice works best here. I’m sure there’s some sciency reason why that is which I don’t know off the top of my head, but trust me. Cold rice is what’s needed here. So, make some ahead of time or the day before. Or heck, just keep a batch of cooked white rice in the refrigerator at all times.

So, back to the recipe. Anything fried rice is going to be a fabulous base for a stir-fried anything. A perfect example would be my Mushroon Stir-fry recipe. The possibilities are practically endless with what you could add to this fried rice recipe.

A Hot Wok = Fast and Perfect Fried Rice

This calls for a wok that is HOT. Don’t worry, wok’s can take it. In fact, they’re made to take that type of heat. The hotter your wok, the easier it will be to get that perfect sizzle on your Bacon and Egg Fried Rice.

As noted below in the recipe, make sure you have all of your ingredients lined up. Once you throw that first ingredient in, it’s on and there will be no time to look back. And then you’ll have burnt garlic. YUCK! Just a warning.

This warning goes for the sauce as well. Have that sauce ready to go. Toss your prepared sauce in the wok until it’s beautifully combined. The end result? A mouthwatering, savory fried rice that’s sure to be a family favorite. My kids love this recipe, and the funny thing is one of them isn’t a big fan of bacon. But blended all together is this form, she chows down on it.

Bacon and Egg Fried Rice

This is an Asian fried rice with the crunch of bacon and velvety soft egg throughout. If you are in the mood for a fried rice that is packed with flavor, this is it.

Equipment

  • 1 wok

Ingredients
  

  • 1 tbsp avocado oil
  • 1 tsp sesame oil
  • 2 large eggs beaten
  • 2 tbsp garlic minced
  • 2 tbsp ginger minced
  • 4 strips bacon thick cut, cooked and crumbled
  • 1/2 cup scallions sliced
  • 5 cups cooked rice cold
  • 2 tbsp soy sauce light
  • 1/2 tsp Kosher salt
  • 1/4 tsp white pepper ground

Instructions
 

  • Cook your rice per the instructions on the packaging.
  • Heat a large wok, preferably a flat bottom one, over high heat until a bead of water vaporizes upon contact. Swirl in 1 tablespoon of the avocado oil, the sesame oil, and the beaten eggs. Cook between 30 seconds to 1 minute. Tilt the pan to make the cooked egg as thin as possible. It should look like a large pancake. Once browning, flip the pancake of egg over with a metal spatula. Allow it to continue to cook for 5 more seconds, then transfer to a cutting board and cut into shreds.
  • Swirl in the remaining tablespoon of avocado oil into the wok, again over high heat. Add the garlic and ginger and stir-fry for 30 seconds only. Add the crumbled bacon and stir-fry for 1 minute. Next add the scallions and cooked rice and stir-fry for 2 to 3 minutes or until the rice has heated through. Add the soy sauce, salt, pepper and shredded egg to the wok and toss well to combine.

Notes

Have all of your prep done before heating the wok. This recipe moves fast. The longer you wait on any step, the greater the chances of burning the garlic or mashing the rice.
