Blueberry Coffee Cake
Perfect with a hot cup of coffee
If you love a good coffee cake, oh do I have a treat for you. And the kids are going to love it too.
Alright, imagine this: you, a bunch of energetic mini-chefs (yes, your kids), and a kitchen filled with giggles, flour, and a sprinkle of magic. What’s on the menu? Only the most scrumptious Blueberry Streusel Coffee Cake you’ve ever tasted!
Is coffee really in this cake daddy?
So the story is this. My oldest daughter, Grace, saw me order coffee cake once at a little independent coffee shop. She said, “Well of course daddies getting coffee cake. He loves his coffee.” And of course that’s true, I do love a cup of good, freshly roasted and brewed coffee. But then I told her what coffee cake was and that had a crumbly top of yummy streusel. And that of course that it was very yummy, with coffee. So of course, she had to try a bite of it. And what do you know, I ended up ordering her one as well because otherwise she was going to be eating all of mine.
Okay, back to this Blueberry Coffee Cake recipe. This one isn’t complicated. It may look like a lot of ingredients, but almost every one of these you should have on hand in your frig and pantry already. Probably the most you’ll need to buy for it would be the blueberries and maybe a cup of yogurt.
First, let’s talk about the streusel. It’s like the superhero costume of the cake world. Instead of a cape, it wears a crunchy, buttery crown on top of this cake. It’s like the rockstar of toppings – bold, crunchy, and it steals the show every time. And, yes there’s an and. AND it is very customizable to suite your own taste.
Now let’s talk about the best part: the kitchen becomes a playground. Little hands wielding spoons, a cloud of flour (No, Isla. Not on the floor. We just cleaned it), brown sugar bombs, and of course contagious laughter – it’s like a scene from a wacky cooking show. Yeah, that’s my kitchen. Since this is a dessert type addition to the breakfast menu, let the kids mix, pour, and create their own cake masterpiece. Grace loves her blueberries and she loves lemon. Paired together, this is an absolute hit and a zinger on the tongue.
As this beauty bakes, you’re going to start smelling it. Basically, your kitchen is going to be a fragrant wonderland for a while. Butter, cinnamon, and blueberries join forces, creating a scent that’s going to make your mouth water for a taste.
So, wrangle your ingredients, summon your mini-chefs, and let the culinary fun begin! Aprons on, spatulas poised, and let’s whip up some kitchen magic. Who knew mornings could be this awesome? Let’s get baking! 🍰🎉
