Ingredients
  

For the Cake

  • 1 cup all-purpose flour
  • 1 cup whole-wheat flour
  • 1 tsp baking soda
  • 1/2 tsp Kosher salt
  • 3 tbsp white sugar
  • 1 tsp cinnamon ground
  • 1/2 cup brown sugar packed
  • 2 tbsp butter room temperature
  • 2 tbsp canola oil
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup yogurt plain
  • 1 cup blueberries fresh or frozen and thawed

For the Streusel

  • 1/2 cup all-purpose flour
  • 1/2 cup white sugar
  • 1/4 cup unsalted butter cold and cubed
  • 1 zest of lemon

Instructions
 

  • Preheat the oven to 350°F, and coat an 8-inch square cake pan with butter. You can also use a 9x13 inch baking pan.

The Dry Mix

  • Whisk together the all-purpose flour, whole wheat flour, baking soda, Kosher salt, white sugar and cinnamon.

The Wet Mix

  • In another bowl, combine the butter and oil with the brown sugar until is it fluffy and with no clumps of sugar. Beat each egg into this mixture one at a time until fully whisked. Then add in the vanilla and yogurt and stir until just combined.
  • Combine the dry mix with the wet mix adding small portions at a time until all is combined. Don't overwork the flour.

The Streusel

  • In a medium bowl, combine the flour, sugar, cold butter, and lemon zest. Use a fork or pastry cutter to mix until crumbly. Set aside.
  • Spread half of the cake batter into your prepared pan. Top the batter with the blueberries pressing them into it and top with half of the streusel mix. Then repeat with the remaining batter and streusel mix.
  • Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the coffee cake to cool before serving. Enjoy!

Notes

So many Streusel options:
  • Nutty Streusel:
    • Add 1/2 cup of chopped nuts (such as pecans, almonds, or walnuts) to the streusel mixture for a delightful crunch and extra flavor.
  • Spiced Streusel:
    • Add a pinch of ground nutmeg or cloves to the streusel mixture for a warm, spiced flavor.
  • Maple Pecan Streusel:
    • Use brown sugar instead of granulated sugar in the streusel mixture, and add 1/2 cup of chopped pecans. Drizzle with maple syrup before baking.
